The selected wine comes from the northernmost area, Moncao e Melgaco, which in addition to being counted as the qualitatively best area, is the only area that by tradition produce wines exclusively from the Alvarinho grape .
The climate here gives perfect conditions for ripening of grape. The wines get a unique freshness, because the producers deliberately block malolactic fermentation and ensures a high percentage malic acid in wines. The family - owned producer Quinta de Soalheiro, are looked upon as pioneers in Moncao e Melgaco, planted their first Alvarinho as late as 1974. Soalheiro Vinho Verde Alvarinho 2014 combines freshness, concentration and elegance in an exemplary way, with delicious minerality in the finish which pairs well with the dish. The fresh acidity and fresh fruit harmonizes perfectly with the flavor -rich asparagus, the intense and fat cream and the sweet and sour tomatoes.
